The Eagan-based restaurant where sushi rolls are made to order at the counter is getting ready to open its fifth spot. . The next one will be in the skyway level of U.S. Bank Plaza in downtown Minneapolis. Its debut is slated for May 4, according to a spokeswoman. Like the other locations, including the one at the USB Center in St. Paul, the new one will offer customizable sushi rolls made to order with such fillings as brown rice, fried tofu, yellow fin tuna, mango, cucumber or avocado. Steamed buns, rice bowls and ramen are also on the menu. To mark the latest opening, One Two Three Sushi is adding a new menu item (offered on�y at the new location, for the time being): customizable rice bowls with such choices as brown, white or ginger scallion-seasoned rice. • Firehouse Subs, the Florida-based chain touting a menu of subs and salads and including an "under 500" calorie menu, is planning more metro locations. . According to the company's website (firehousesubs.com), one is slated to open soon across from HarMar Mall in Roseville and another at Tamarack Village in Woodbury. There are already four metro locations: Maplewood, Richfield, Maple Grove and Pfymouth. • Moe's Southwest Grill in Bloomington (2137 W. 80 1/2 St.; moes.com) debuted in the metro in 2012, and the Atlanta-based Tex-Mex chain recently announced plans to expand in the Twin Cities area. . Look for a fast-casual format with such menu items as burritos, tacos, quesadillas, burrito bowls and "stacks"--fixings layered between corn tortillas-- made to order at the counter.
